Granola

Granola is always a staple in my pantry! We eat it plain, on yogurt, and in a few dessert recipes! My kids are not fond of eating nuts in their granola. They love mixed nuts, just not in granola. You can add a cup of nuts to yours or different dried fruits. Make it your own!

Ingredients

1C. Creamy Peanut Butter

3/4C. Coconut Oil

1C. Honey

1 1/2 tsp. Vanilla

1/2 tsp. Salt

10 C. Old Fashioned Oats

1C. Dried Cranberries

1C. Dried Cherries

1C. Unsweetened Coconut Flakes

Preheat oven to 350 degrees

On the stove over medium heat melt together oil, peanut butter, and honey. Make sure to stir every 30 seconds or so. You don’t want the peanut butter to burn on the bottom! In between stirs add the oats, nuts, fruit, coconut flakes, etc to a large bowl. When liquid mixture is melted remove from heat. Next add salt and vanilla. Pour into the bowl and mix everything together well.

Divide granola between two baking sheets. Make sure it’s spread out evenly. Place in oven for 10 to 12 minutes. When finished, set out on counter until it’s completely cooled. Then throw in a jar of your choice!
