This pancake recipe is fluffy and perfect! I try to always have some in the freezer for quick a breakfast. The boys can grab one or two and pop them into toaster. Place pancakes in a single layer on a baking sheet and freeze for 10 minutes. Then place them into Ziploc freezer bags! If you put them into Ziploc bag without freezing first, the pancakes will stick together! I learned the hard way, lol.


2 Eggs

1 C. Melted and cooled Butter (or can use Canola Oil)

3-4 C. Milk

2 tsp. Baking Soda

4 tsp. Baking Powder

2 tsp. Vanilla

1tsp. Salt

4 C. Flour

Add flour, salt, baking soda, and baking powder to a large bowl and stir. Make a hole in the middle of the flour mixture and add your eggs, vanilla, butter (or oil), and 3 cups of milk. Stir together and add extra milk to make it the consistency you like. I use all 4 cups of the milk.

Make sure your griddle is hot! I put mine on 400°. Then I coat the griddle with butter or coconut oil to make the pancakes a little crispy on the edges! Once the pancake starts to bubble, usually about 3 minutes, I flip and cook 1 more minute. Then you should have a perfect pancake to decorate with butter, peanut butter, syrup, fruit, or anything your heart desires!!
